中崎町【フスマにかけろ】/Fusuma ni Kakero (Nakazakicho,Osaka)

So I visited “Fusuma ni Kakero” in Nakazaki-cho today.
I ordered the “Umami Shoyu Ramen with Ajitama topping -850yen,” after two people.
The ramen bowl was delivered to me while I was looking at the autographs on the wall.
The glossy oil looks amazing. Tried the soup first.
Wow…it’s heavenly!!!
It was heavy seafood-based shoyu soup which I could even touch the wildness in it.
This shoyu soup is rich in seafood-mainly bonito- broth flavor and changes taste by temperature.
The noodle’s flavor of flour was there, it was nice, chewy, and perfect that it was not conquered by the soup.
The resiliency toward my teeth was nice.
The topped pork, chicken cha-shu, soft-boiled egg, and Shinachiku were all so perfect, too.
I could see the possibility of ginger that the grazed ginger perfect for winter and shoyu soup were the best match. It was too heavenly that I finished it in 2 seconds.

The noodle, the soup, and all the topping ingredients were high level that it’s definitely the top class in Osaka.
Strongly felt that I have to be an adult man to know its value. Will come again!

本日は中崎町【フスマにかけろ】を訪問。
2人待って【旨味醤油らーめん+味玉(850円)】を注文。
店内の色紙を眺めていると、ほどなくして着丼。
油の照り返りが素晴らしい。
まずはスープから。
うっ…うまい…!!!
ワイルドささえ感じる、しっかり味の魚介醤油。
鰹を中心に様々な魚介の出汁を取った醤油スープはコクがあり、温度の変化によって味を楽しめる。
麺は中太のストレート麺。
もっちり弾力と小麦の風味を感じられ、スープに負けない完成度。歯への反発感が心地よい。
豚ロースと鶏チャーシュー、やや半熟の煮卵、支那竹まで全て抜かりない。
寒い季節にぴったりの生姜と醤油スープの相性が抜群に良く、生姜の可能性を感じる。
美味すぎて2秒で完食。ご馳走様でした。

麺、スープ、具材全てのレベルが高く、大阪では間違いなくトップクラス。
大人になってから価値の分かる麺だとあらためて痛感。
また来ます!
