大宮【セアブラノ神】/Seaburanokami (Omiya、Kyoto)

So I visited Seaburanokami in Omiya, Kyoto.

Though the shop is located near from my parents' home, this was my first time.

I ordered the 'Seabura Niboshi Soba -750yen' with a choice of thick noodles as a premise.

Shortly after, here comes the bowl full of Seabura which the shop's name had been it not very astonishing already.

Tried the soup first.

Wow… it's heavenly!!!

The shoyu-based soup was smooth on my tongue, light, dry, and even sweet rather than its look.

There was a great gap such as like a gangster looking guy loves animals actually.

The Seabura unified with the soup while they're stewed, so the smoothness and the umami could be expressed.

The noodle was low water added, wrinkled, and thick which makes it go well with the Niboshi soup.

Its chewiness just works up my appetite.

The cleanliness and the service were wonderful.

There is this great gap between how actually the shop is, and how the shop name -The God of Pork Back Fats- makes us imagine an dirty little shop owned by a muscular middle-aged man serving a bowl of oily ramen, haha.

NOTA-LOG gives it the score of 4.15 ★★★★☆!

I'd just love to give some respect to the Tsubame-Sanjo ramen in Niigata for inspiring the new age Seabura-cha-cha ramen. Will come again!

大宮【セアブラノ神】

京都・大宮【セアブラノ神】を訪問。

実家からはまあまあ近いのに実は初訪問の名店である。

まずはデフォの【背脂煮干そば(750円)】を太麺で注文。

ほどなくして、店名に負けない背脂の器が着丼。

まずはスープから。

うっ…うまい…!!!

舌触りの滑らかな煮干し醤油。

見た目の割にすっきりした淡麗系で、甘みさえ感じるギャップがある。

オラオラ系な人が実は動物好きだったぐらいにはギャップである。

背脂は小鍋で一緒に煮込んでいるためスープと一体化し、口当たりの良さと旨味を表現している。

麺は煮干しスープに合うやや低加水の太ちぢれ麺。

煮干しとの相性もよく、モチモチ感が食欲を刺激する。

店内の清潔さや接客サービスも素晴らしく、「小汚い店でマッチョなおじさんがギトギトスープを提供してそうな店名」とは間逆の名店。笑

のたログ4.15★★★★☆です!

インスパイア元の新潟・燕三条に敬意を表したくなる新世代のチャッチャ系。

また来ます!
