阿波座【香澄(かすみ)】/ Kasumi (Awaza, Osaka)

I’ve been to Kasumi in Awaza.

My plan was to have the Maze-Soba before stepping into the shop, but I ordered the ‘Tokusei Niboshi Ramen -950yen’ which was Kasumi’s recommended menu on the wall, instead. Shortly after, here comes the ramen.

Larger portion of topped green onions and floating pork back fats in the clear soup, hmm, what a nice view.

Tried the soup first.

Wow… it’s heavenly!!!

The shoyu-based soup was very rich in the niboshi-dashi, and nicely balanced with pork back fats, so that I could feel its width and depth. It has no acrid taste, against that it’s particular for the general niboshi-dashi to have certain acrid taste in it.

This soup could even be recommended for kids. The noodle was flat and thick with comfortable chewiness.

Just like the shop ‘Ramen Nagi,’ Kasumi’s noodle is very good balanced with its soup. What’s noteworthy here is the low-temperature cooked chashu meats, however.

Although they are seasoned very simply with only salt and pepper, the savory taste was soaked all over the pieces. Juicy, tender, and perfectly filling. This bowl was just so perfect that it could bring a crowd of people for a pop up Kasumi shop at some events in department stores.

Considering the suburban location rare for famous ramen shops, NotaLog give it the score of 4.00★★★★☆!

Not very far from either of Osaka’s Kita-area or Minami-area. You’re gonna love it!

阿波座【香澄(かすみ)】を訪問。

来店前は混ぜそば目当てだったが、

ついついオススメと書かれていた【特製煮干らーめん(950円)】を注文。

ほどなくして着丼。

透明感のあるスープに、プカプカ浮かぶ背油と多めの刻み葱。

うっとり。いい眺めだ。

まずはスープから。

うっ…うまい…!!!

煮干たっぷりの醤油ベース。背油とマッチしてバランスが良く、奥行きと懐の深さを感じさせる。

煮干特有のエグみもなく、お子様にもぜひ勧められる安心感のあるスープだ。

麺は弾力が心地良い平打ちの太麺。

ラーメン凪よろしく、煮干し系のスープと非常に相性の良い組み合わせ。

しかしながら特筆すべきは、この低温調理した香ばしい炙りチャーシュー。

味付けはシンプルな塩胡椒にも関わらず旨味が容赦なく浸透しており、ジューシーかつ柔らかで食べ応えもバッチリ。百貨店催事で出せば行列ができるかもしれない完成度だ。

名店の中では近郊な立地も加味して、のたログ4.00★★★★☆です!

キタからもミナミからも、そう遠くないですよ!
